Responsibilities

  • Prepares a variety of eggs, meats, seafood, poultry, vegetables and other food items for cooking in broilers, sauté, ovens, grills, fryers and a variety of other kitchen equipment.
  • Assume 100% responsibility for quality of products served.
  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and approved recipes.
  • Maintains a clean and sanitary workstation. Follow all food safety, sanitation, and HACCP guidelines when preparing hot and cold foods.
  • Portion food products prior to cooking according to standard portion sizes and recipe specifications.
  • Is responsible for having knowledge and understanding of all kitchen equipment (smoker, combi oven, broiler, sous vide equipment)
  • Informs supervisor immediately of product shortages.
  • Uses standard recipe cards for preparing all products.
  • Assists in all areas of food preparation and production as needed.
  • Opens and kitchen properly by following the established opening checklists for the kitchen.
  • Duties, responsibilities, requirements and expectations pertaining to this job are subject to change as needed.
  • Works’ days, nights, weekends, special events and holidays as needed.
  • Assists with banquets and off-site events as needed
  • Performs other duties as assigned.

Qualifications

  • Exceptional guest service skills required.
  • Proficiency with classically taught knife skills (julienne, chiffonade, brunoise, batonnet, etc.)
  • Butchery skills preferred but not required.
  • Familiar with modern cooking techniques (sous vide, combi oven operation, hydrocolloids, etc.)
  • Comfortable with constructive criticism and willing to learn and grow.
  • Must be customer service oriented and have excellent verbal and written communication skills 
  • Ability to work in a challenging environment dealing with sensitive issues and maintain confidentially 
  • Attention to detail and excellent problem solving, organizational, and time management skills.
  • Ability to maintain professional, courteous, and effective working relationships with all levels of the organization and outside business contacts.
  • Possess the ability to handle multiple prep or cooking tasks simultaneously in an efficient manner

Certificates, Licenses, Regulations

  • Must be able to obtain and maintain a Class B gaming license from the Stillaguamish Tribal Gaming Agency.
  • Must be able to obtain and maintain a Washington State Health Card (Food Worker Card).

Physical Demands and Work Environment

Constantly requires the ability to receive detailed information through oral and written communication. The position requires exerting up to 50 pounds of force occasionally, and/or up to 20 pounds of force frequently, and/or up to 10 pounds of force constantly to move objects. From time to time the position might require the lifting of full kegs of beer and moving those kegs to other areas. Requires repetitive movement with the ability to stand and/or walk for an entire shift. There are no adverse conditions, but employee is exposed to tobacco smoke on a regular basis. This is a 24 hour, 7 days a week work operation.
